Dirty Rice

1 onion (chopped)
½ C celery (chopped)
4-6 cloves garlic (minced)
½ C green onion
1 LB ground sirloin or round beef
2½ TSP salt
2 LB chicken (whole pieces or sliced breast)
¼ TSP black pepper
½ LB smoked sausage (andouille, etc.)
4 chicken boullion cubes
3 TBS parsley
2 cups long grain rice
1 PKG Lipton Cream Of Chicken Soup (dried)
4 C water
2 TBS olive oil

Temperature:

Brown chicken in a heavy 5 QT pot and set aside. Don’t wash the pot. Sauté onion and garlic in olive oil, adding other vegatables when onion is soft. Add sausage and cook, stirring for 6 minutes. Add beef and cook, stirring till well done. Return chicken to the pot. Add seasonings. Add 2 C water and simmer covered for 20 minutes. Add remaining 2 C water, bring to a boil then stir in 2 C rice. Cover and simmer on low heat till rice is tender and dry (can be done in electric rice cooker – make base in pot then put in cooker with rice and water).
