- 1 C uncooked long-grain white rice
- 1 SM red bell pepper (diced)
- ½ bunch green onions (chopped)
- ¾ C frozen peas
- ¾ C frozen shelled edamame
- 2 C chicken stock
- 5 TBS honey
- 3 OZ low sodium soy sauce
- 6 cloves garlic (minced)
- 1 TBS ketchup
- 1 TBS brown sugar
- ¼ TSP black pepper
- ½ TSP onion powder
- 1 TSP ginger (minced)
- 22 OZ frozen turkey meatballs
- Preheat oven to 400°F.
- Lightly grease a 9×13-inch baking dish.
- Spread uncooked rice evenly in the baking dish.
- Add diced bell pepper, green onion, peas and edamame over the rice.
- In a bowl whisk chicken stock, honey, soy sauce, garlic, ketchup, brown sugar, black pepper, onion powder and ginger.
- Pour the sauce mixture over the rice and vegetables, stirring gently.
- Arrange meatballs evenly on top.
- Cover tightly with foil and bake 40–45 minutes until the rice is tender.
- Remove foil and bake another 10 minutes so the sauce thickens slightly.
- Let rest 5 minutes and serve warm.
