{"id":1610,"date":"2012-04-20T23:02:32","date_gmt":"2012-04-21T04:02:32","guid":{"rendered":"http:\/\/dmentd.com\/?p=1610"},"modified":"2024-11-13T17:22:32","modified_gmt":"2024-11-13T23:22:32","slug":"chicken-paprikash","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/chicken-paprikash","title":{"rendered":"Chicken Paprikash"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>2 LBS boneless, skinless chicken thighs<\/li>\n\n\n\n<li>1 LG onion (diced)<\/li>\n\n\n\n<li>8 cloves garlic (minced)<\/li>\n\n\n\n<li>8 OZ carrots (sliced into coins)<\/li>\n\n\n\n<li>8 OZ mushrooms (sliced)<\/li>\n\n\n\n<li>1 C sweet corn (optional)<\/li>\n\n\n\n<li>3 TBS paprika<\/li>\n\n\n\n<li>Salt and pepper<\/li>\n\n\n\n<li>3 C chicken stock<\/li>\n\n\n\n<li>Cornstarch slurry<\/li>\n\n\n\n<li>1 C sour cream (or full-fat plain yogurt)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>To make the chicken paprikash, season (generously) the chicken with salt, pepper, and the paprika.<\/li>\n\n\n\n<li>Brown the chicken over medium heat on all sides then remove from pan.<\/li>\n\n\n\n<li>Add the onions and carrots and allow onions to soften and go translucent.<\/li>\n\n\n\n<li>Add the garlic and saute until fragrant &#8211; 1 to 2 minutes.<\/li>\n\n\n\n<li>Add a little of the chicken stock and deglaze the pan.<\/li>\n\n\n\n<li>Return the chicken to the pot. Add chicken stock to just cover the chicken and vegetables. Add the mushrooms.<\/li>\n\n\n\n<li>Bring to a simmer and reduce the heat to low. Cover, and simmer for 30 minutes, or until the chicken is tender.\n<ul class=\"wp-block-list\">\n<li><u><strong><span style=\"text-decoration: underline;\">Slow Cooker:<\/span><\/strong><\/u> cook covered over low for 6 to 8 hours instead.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Remove the chicken from the pot. Return to a simmer and add cornstarch slurry in small amounts while stirring until the desired consistency is obtained.<\/li>\n\n\n\n<li>Add the sour cream (or yogurt) and mix well.<\/li>\n\n\n\n<li>Once the chicken has cooled a bit, shred or chop coarsely then return to the pot.<\/li>\n\n\n\n<li>Serve over pasta or rice.<\/li>\n\n\n\n<li>Sprinkle with paprika and enjoy.<\/li>\n<\/ol>\n\n\n\n<p>Yields 8 servings.<\/p>\n\n\n\n<p>Another option is to add <strong><a href=\"http:\/\/dmentd.com\/318\" target=\"_blank\" rel=\"noopener\">dumplings<\/a><\/strong> to the gravy after adding the sour cream and returning the chicken to the pot.
