{"id":1765,"date":"2014-07-01T21:13:01","date_gmt":"2014-07-02T02:13:01","guid":{"rendered":"http:\/\/dmentd.com\/?p=1765"},"modified":"2024-11-15T14:00:12","modified_gmt":"2024-11-15T20:00:12","slug":"bread-butter-pickles","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/bread-butter-pickles","title":{"rendered":"Bread &#038; Butter Pickles"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>2 LB pickling cucumbers (sliced \u215b&#8221; thick) (Kirby variety if available &#8211; small and bumpy)<\/li>\n\n\n\n<li>1 MED\u00a0sweet onion (halved, then Frenched into \u215b&#8221; slices)<\/li>\n\n\n\n<li>1 LG red bell pepper (stemmed, seeded, sliced into \u215b&#8221; strips)<\/li>\n\n\n\n<li>8 whole garlic cloves (smashed)<\/li>\n\n\n\n<li>2 C cider vinegar (5% acidity)<\/li>\n\n\n\n<li>1\u00bd C water<\/li>\n\n\n\n<li>2 C sugar<\/li>\n\n\n\n<li>1 TBS (\u00bc per PT)\u00a0yellow mustard seeds<\/li>\n\n\n\n<li>1 TSP (\u00bc per PT)\u00a0turmeric<\/li>\n\n\n\n<li>\u00bd TSP (\u215b per PT)\u00a0celery seeds<\/li>\n\n\n\n<li>\u00bc TSP (1\/16 per PT)\u00a0ground cloves<\/li>\n\n\n\n<li>1 TSP (\u00bc per PT)\u00a0Pickle Crisp (optional)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Toss cucumbers, onions and bell pepper together.\u00a0Divide the Pickle Crisp and garlic evenly into 4 sanitized PT\u00a0jars with tight-fitting lids. Packing in as tightly as you can, add the vegetables to the jars,\u00a0filling to within \u00bc&#8221; of the top of the jar.<\/li>\n\n\n\n<li>Bring vinegar, sugar, water, mustard seeds, turmeric, celery seeds and ground cloves to a boil in a non-reactive heavy pot over medium-high heat\u00a0and simmer for 4 full minutes to wake up the spice flavors. Slowly and gently pour the hot brine over the vegetables, evenly distributing spices, again filling to within \u00bc&#8221; of the top of the jar.<\/li>\n\n\n\n<li>Let cool completely, then cover and refrigerate for 2 days before eating.<\/li>\n\n\n\n<li>Can be refrigerated for up to 2 months.<\/li>\n\n\n\n<li>Alternatively, you can use a standard hot water bath canning method to preserve them further.<\/li>\n<\/ol>\n\n\n\n<p>Yields 4 PT.<\/p>\n\n\n\n<p><span style=\"text-decoration: underline;\"><strong>NOTE:<\/strong><\/span> If canning you can simplify the process as follows: divide evenly and add to the bottom of each jar the mustard seeds, turmeric, celery seeds, ground cloves and Pickle Crisp before adding the garlic, onions, bell pepper, and cucumbers. Combine the water, vinegar and sugar then bring to a boil. Turn off the heat then add to the jars.
