{"id":1955,"date":"2020-04-27T14:51:41","date_gmt":"2020-04-27T19:51:41","guid":{"rendered":"https:\/\/dmentd.com\/?p=1955"},"modified":"2024-11-08T16:29:01","modified_gmt":"2024-11-08T22:29:01","slug":"white-chili-with-chicken-slow-cooker","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/white-chili-with-chicken-slow-cooker","title":{"rendered":"White Chili with Chicken (Slow Cooker)"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>1 LG onion (finely diced)<\/li>\n\n\n\n<li>8 cloves garlic (minced)<\/li>\n\n\n\n<li>4 OZ can mild diced green chiles (reduce to half for less spice)<\/li>\n\n\n\n<li>1 TSP dried oregano<\/li>\n\n\n\n<li>1 TSP ground cumin<\/li>\n\n\n\n<li>2 C low-sodium chicken stock<\/li>\n\n\n\n<li>30 OZ canned white beans &#8211; cannellini, navy, etc. (drained and rinsed)<\/li>\n\n\n\n<li>2 LB (~5) boneless skinless chicken thighs<\/li>\n\n\n\n<li>1\u00bc TSP kosher salt<\/li>\n\n\n\n<li>\u00bd TSP freshly ground black pepper<\/li>\n\n\n\n<li>1\u00bd C frozen corn<\/li>\n\n\n\n<li>\u00bd C sour cream<\/li>\n\n\n\n<li>Splash of lime juice<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><span style=\"text-decoration: underline;\">Optional for Serving<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Monterey Jack cheese (shredded)<\/li>\n\n\n\n<li>Avocado (sliced)<\/li>\n\n\n\n<li>Jalape\u00f1o (thinly sliced)<\/li>\n\n\n\n<li>Fresh cilantro (chopped)<\/li>\n\n\n\n<li>Lime wedges<\/li>\n\n\n\n<li>Tortilla chips (broken into medium pieces)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Add broth, beans, chicken, green chiles, onion, garlic, corn, oregano, and cumin to the bowl of your slow cooker. Season with salt and pepper and cook on low 6 to 8 hours, or on high for 2 to 3 hours, or at least until chicken is tender.<\/li>\n\n\n\n<li>Remove chicken from chili and shred. Use a potato masher to gently mash about 1\/3 of the beans before returning chicken to slow cooker. Stir in shredded chicken, sour cream and a splash of lime juice, check seasoning and adjust as needed.<\/li>\n\n\n\n<li>To serve, top with your choice of avocado, jalape\u00f1o, cilantro, chips and a squeeze of lime juice.<\/li>\n\n\n\n<li><strong><span style=\"text-decoration: underline;\">For stovetop cooking:<\/span><\/strong> saute onions and garlic first before combining the rest of the ingredients. Increase chicken stock to 4 cups. Simmer for 20 to 30 minutes, stirring often, until chicken is tender and cooked through.
