{"id":2096,"date":"2024-10-31T14:10:22","date_gmt":"2024-10-31T19:10:22","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2096"},"modified":"2024-10-31T14:10:22","modified_gmt":"2024-10-31T19:10:22","slug":"sweet-potato-enchiladas","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/sweet-potato-enchiladas","title":{"rendered":"Sweet Potato Enchiladas"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>1 LG sweet potato (peeled and cut into cubes)<\/li>\n\n\n\n<li>1 TBS olive oil<\/li>\n\n\n\n<li>1 onion (sliced)<\/li>\n\n\n\n<li>2 cloves garlic (minced)<\/li>\n\n\n\n<li>1 jalapeno pepper (seeded and minced)<\/li>\n\n\n\n<li>1 can Old El Paso Traditional Refried Beans<\/li>\n\n\n\n<li>1 TSP chili powder<\/li>\n\n\n\n<li>1 TSP cumin<\/li>\n\n\n\n<li>\u215b TSP cayenne pepper<\/li>\n\n\n\n<li>6 8&#8243; flour tortillas (soft taco size)<\/li>\n\n\n\n<li>1 can Old El Paso Green Enchilada Sauce<\/li>\n\n\n\n<li>\u2153 C shredded cheddar cheese<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat oven to 400\u00b0F.<\/li>\n\n\n\n<li>Bring a large pot of water to a boil. Add the sweet potatoes and cook until tender, 10-15 minutes. Darin and mash.<\/li>\n\n\n\n<li>Meanwhile, heat the olive oil in a sautee pan set over medium heat. Add the onions and garlic. Cook, stirring occasionally until soft and golden, about 15 minutes. Transfer half of the onions to a small dish; set aside. Add jalapeno to pan and cook 3 minutes.<\/li>\n\n\n\n<li>Add the mashed sweet potatoes, refried beans, and spices to the pan of onions. Mix well.<\/li>\n\n\n\n<li>Pour the enchilada sauce into a shallow dish. Dip a tortilla in the sauce, coating both sides. Spoon half cup filling onto center of tortilla; top with reserved onions. Roll up and place seam-side down in a 6&#8243;x8&#8243; baking dish. Repeat with remaining tortillas.
