{"id":2104,"date":"2024-10-31T15:22:56","date_gmt":"2024-10-31T20:22:56","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2104"},"modified":"2024-11-08T16:25:04","modified_gmt":"2024-11-08T22:25:04","slug":"slow-cooker-ethiopian-chicken-lentil-stew","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/slow-cooker-ethiopian-chicken-lentil-stew","title":{"rendered":"Ethiopian Chicken &amp; Lentil Stew (Slow Cooker)"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>2 TBS butter<\/li>\n\n\n\n<li>1 onion (finely diced)<\/li>\n\n\n\n<li>2 TBS berbere spice mix (*see note)<\/li>\n\n\n\n<li>\u00bd TSP ground cardamom<\/li>\n\n\n\n<li>2 TSP paprika<\/li>\n\n\n\n<li>1 TBS ginger (minced)<\/li>\n\n\n\n<li>3 cloves garlic (minced)<\/li>\n\n\n\n<li>2 carrots (peeled and sliced)<\/li>\n\n\n\n<li>2 ribs of celery (sliced)<\/li>\n\n\n\n<li>2 C sweet potatoes (peeled and cubed)<\/li>\n\n\n\n<li>2 chicken breasts<\/li>\n\n\n\n<li>1 C green split lentils dried<\/li>\n\n\n\n<li>540mL\/19oz canned diced tomatoes (including juices)<\/li>\n\n\n\n<li>1 C chicken stock<\/li>\n<\/ul>\n\n\n\n<p>After cooking:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\u00bd TBS lemon juice (~\u00bd a lemon)<\/li>\n\n\n\n<li>1 TSP brown sugar<\/li>\n\n\n\n<li>Salt (if needed)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Melt butter in a medium pan over medium heat. Add the onion and cook 5-8 minutes, until cooked through.<\/li>\n\n\n\n<li>Add the berbere, cardamom, paprika, ginger and garlic, and cook for 1-2 more minutes, until fragrant.<\/li>\n\n\n\n<li>Place the onion mixture in the slow cooker along with all remaining ingredients.<\/li>\n\n\n\n<li>Cook on low for 6 hours.<\/li>\n\n\n\n<li>Gently stir in the lemon juice, brown sugar, and salt (if needed).<\/li>\n\n\n\n<li>Serve with flatbread and yogurt.<\/li>\n<\/ol>\n\n\n\n<p><strong>NOTES:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>*Berbere is an Ethiopian spice blend. You may be able to find it in specialty stores, however it can be made using <strong><a href=\"https:\/\/dmentd.com\/blog\/berbere-spice-blend\" data-type=\"link\" data-id=\"https:\/\/dmentd.com\/blog\/berbere-spice-blend\" target=\"_blank\" rel=\"noreferrer noopener\">this recipe<\/a><\/strong>.<\/li>\n\n\n\n<li>This stew is medium-spicy. If you don&#8217;t like spice, you will need to reduce the cayenne\/red pepper flakes in the berbere spice blend.
