{"id":2118,"date":"2024-11-05T16:07:13","date_gmt":"2024-11-05T22:07:13","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2118"},"modified":"2024-11-05T16:07:13","modified_gmt":"2024-11-05T22:07:13","slug":"stuffed-pepper-soup","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/stuffed-pepper-soup","title":{"rendered":"Stuffed Pepper Soup"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>2\u00bd C cooked brown rice<\/li>\n\n\n\n<li>1 LB 95% lean ground beef<\/li>\n\n\n\n<li>\u00bd C green bell pepper (chopped)<\/li>\n\n\n\n<li>\u00bd C red bell pepper (chopped)<\/li>\n\n\n\n<li>1 C onion (finely diced)<\/li>\n\n\n\n<li>3 cloves garlic (minced)<\/li>\n\n\n\n<li>29 OZ canned petite diced tomatoes<\/li>\n\n\n\n<li>1\u00be C tomato sauce<\/li>\n\n\n\n<li>2 C reduced sodium, fat-free chicken broth<\/li>\n\n\n\n<li>\u00bd TSP dried marjoram<\/li>\n\n\n\n<li>Salt &amp; fresh pepper to taste<\/li>\n<\/ul>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Stove-Top:<\/span><\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a large pot or dutch oven, brown ground meat on high heat and season with salt.<\/li>\n\n\n\n<li>Drain fat if any, reduce heat to medium-low, then add peppers, onions and garlic.<\/li>\n\n\n\n<li>Cook about 5 minutes on low heat.<\/li>\n\n\n\n<li>Add tomatoes, tomato sauce, chicken broth, marjoram and season with salt and pepper to taste. Cover and simmer on low heat for 30 minutes.<\/li>\n<\/ol>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Instant Pot:<\/span><\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Press saute button on Instant Pot, spray the pot with nonstick spray, add the ground meat and salt and cook until no longer pink, 5 to 8 minutes.<\/li>\n\n\n\n<li>Drain fat if any, then add peppers, onions and garlic and cook 4 to 5 minutes.<\/li>\n\n\n\n<li>Add tomatoes, tomato sauce, chicken broth, marjoram and season with salt and pepper to taste. Cover and cook high pressure 15 minutes.
