{"id":2133,"date":"2024-11-06T16:47:33","date_gmt":"2024-11-06T22:47:33","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2133"},"modified":"2024-11-06T16:47:33","modified_gmt":"2024-11-06T22:47:33","slug":"spaghetti-squash-carbonara","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/spaghetti-squash-carbonara","title":{"rendered":"Spaghetti Squash Carbonara"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>2 TSP salt, divided<\/li>\n\n\n\n<li>1\u00bc TSP fresh cracked black pepper<\/li>\n\n\n\n<li>1 LG spaghetti squash (~2 LB)<\/li>\n\n\n\n<li>4 slices bacon (cut into small strips crosswise)<\/li>\n\n\n\n<li>2 TSP minced garlic<\/li>\n\n\n\n<li>\u00bc C chicken broth<\/li>\n\n\n\n<li>2 egg yolks + 1 whole egg<\/li>\n\n\n\n<li>1 C freshly grated Parmesan cheese<\/li>\n<\/ul>\n\n\n\n<p>Oven: 375\u00b0<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Prick the squash all over with a fork. Sprinkle with 1 tsp salt and 3\/4 tsp. pepper. Roast on a foil lined pan 1 to 1 1\/2 hours.<\/li>\n\n\n\n<li>Let cool a bit. Slice in half lengthwise, scoop out seeds and shred the squash with a fork. Transfer to a large bowl.<\/li>\n\n\n\n<li>In a large saute pan, over medium heat, cook the bacon until it becomes crispy.<\/li>\n\n\n\n<li>Add the garlic. Saute for 1 minute.<\/li>\n\n\n\n<li>Add the broth and cook until the liquid has completely evaporated.<\/li>\n\n\n\n<li>In a medium bowl, whisk the eggs together with the cheese.
