{"id":2135,"date":"2024-11-06T16:56:35","date_gmt":"2024-11-06T22:56:35","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2135"},"modified":"2024-11-08T16:32:41","modified_gmt":"2024-11-08T22:32:41","slug":"instant-pot-chicken-stew-with-corn-pollo-guisado-con-maiz","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/instant-pot-chicken-stew-with-corn-pollo-guisado-con-maiz","title":{"rendered":"Chicken Stew with Corn (Pollo Guisado con Maiz) (Instant Pot)"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>8 skinless chicken drumsticks (~28 OZ)<\/li>\n\n\n\n<li>\u00bd TSP kosher salt<\/li>\n\n\n\n<li>\u00bd TSP garlic powder<\/li>\n\n\n\n<li>1 TSP olive oil<\/li>\n\n\n\n<li>\u00bd MED onion (chopped)<\/li>\n\n\n\n<li>3 scallions (chopped)<\/li>\n\n\n\n<li>1 plum tomato (diced)<\/li>\n\n\n\n<li>3 garlic clove (minced)<\/li>\n\n\n\n<li>\u00bc C chopped cilantro + 1 TBS for garnish<\/li>\n\n\n\n<li>8 OZ can tomato sauce<\/li>\n\n\n\n<li>2 C water<\/li>\n\n\n\n<li>2 cubes chicken bouillon<\/li>\n\n\n\n<li>\u00bd TSP cumin<\/li>\n\n\n\n<li>2 corn on the cob (husked and halved)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Season chicken with salt and garlic powder.<\/li>\n\n\n\n<li>Saute the onions, scallions, tomato and garlic in olive oil until soft, 2 to 3 minutes.<\/li>\n\n\n\n<li>Add \u00bc cup cilantro and stir 1 minute.<\/li>\n\n\n\n<li>Add tomato sauce, water, bouillon, cumin and stir. Place the chicken in the sauce. Top with corn.<\/li>\n\n\n\n<li>Cover and cook on high pressure 20 minutes.
