{"id":2310,"date":"2024-11-12T13:25:34","date_gmt":"2024-11-12T19:25:34","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2310"},"modified":"2024-11-12T13:30:09","modified_gmt":"2024-11-12T19:30:09","slug":"roast-chicken-mtm","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/roast-chicken-mtm","title":{"rendered":"Roast Chicken &#8211; MTM"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>5-6 LB hen<\/li>\n\n\n\n<li>2 TBS butter (cut into \u00bc TBS pats and frozen)<\/li>\n\n\n\n<li>Olive Oil<\/li>\n\n\n\n<li>Herbs (sage, oregano, Italian blend, etc.)<\/li>\n\n\n\n<li>Salt<\/li>\n\n\n\n<li>Black pepper<\/li>\n\n\n\n<li>non-stick cooking spray<\/li>\n<\/ul>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Vegetable Options (choose 2 or 3):<\/span><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 LB carrots (cut into batons)<\/li>\n\n\n\n<li>1 LB parsnips (peeled and cut into batons)<\/li>\n\n\n\n<li>1\u00bd LB baby gold potatoes (quartered)<\/li>\n\n\n\n<li>2 LB fresh Brussels sprouts (halved)<\/li>\n\n\n\n<li>\u00bd onion (cut into half-rings)<\/li>\n<\/ul>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Equipment:<\/span><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Large roasting pan<\/li>\n\n\n\n<li>2 \u00bc-sheet pan cooling racks (or a rack that will cover the bottom of the pan)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Spray the large roasting pan and the cooling racks with cooking spray.<\/li>\n\n\n\n<li>Add the vegetables to the pan, drizzle with olive oil and season with salt, pepper and herbs (save the vegetable off-cuts for stock making another time). With gloved hands mix thoroughly.<\/li>\n\n\n\n<li>Place the cooling rack(s) directly on top of the vegetables in the pan.<\/li>\n\n\n\n<li>Rinse, spatchcock and remove the wishbone from the chicken (save the spine and wishbone for stock making another time). Pat dry.<\/li>\n\n\n\n<li>Loosen the skin over the breast, thighs and drumstick using your fingers. Avoid tearing the skin.
