{"id":2329,"date":"2024-11-13T16:03:18","date_gmt":"2024-11-13T22:03:18","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2329"},"modified":"2024-11-13T16:03:18","modified_gmt":"2024-11-13T22:03:18","slug":"greens-and-cheese-frittata","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/greens-and-cheese-frittata","title":{"rendered":"Greens and Cheese Frittata"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>1\u00bd LB collard greens or kale<\/li>\n\n\n\n<li>3 TBS olive oil<\/li>\n\n\n\n<li>1 onion (chopped)<\/li>\n\n\n\n<li>5 cloves garlic (minced)<\/li>\n\n\n\n<li>6 eggs<\/li>\n\n\n\n<li>3 OZ cheese (shredded)<\/li>\n\n\n\n<li>Herbs of choice<\/li>\n\n\n\n<li>Salt &amp; pepper<\/li>\n<\/ul>\n\n\n\n<p>Oven: 400\u00b0<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Remove the thick stems and ribs from the greens and discard them. Roughly chop the leaves and put them in a large heatproof bowl.<\/li>\n\n\n\n<li>Bring a kettle of water to a boil.<\/li>\n\n\n\n<li>Sprinkle the leaves generously with salt, then pour the boiling water over them and let sit for 10 minutes.<\/li>\n\n\n\n<li>Meanwhile, put the oil in a large ovenproof skillet over medium-high heat. Once hot add the onion and garlic and season with salt and pepper. Cook, stirring occasionally, until the onion is tender and translucent \u2013 about 5 minutes.<\/li>\n\n\n\n<li>Drain the greens well and add to the skillet. Cook, stirring occasionally until they are very tender \u2013 10-12 minutes<\/li>\n\n\n\n<li>In a medium bowl beat together the eggs, cheese, herbs along with salt and pepper.<\/li>\n\n\n\n<li>Turn off the heat under skillet, pour the egg mixture over the vegetables and stir very gently just to distribute all ingredients evenly in the skillet.<\/li>\n\n\n\n<li>Transfer the skillet to the oven and bake until the top of the fritatta is firm and the edges are golden brown \u2013 about 20 minutes.
