Rinse before proceeding.<\/li>\n\n\n\n<li>Blot the brisket dry and brush on a light coating of oil.<\/li>\n\n\n\n<li>Apply rub.<\/li>\n\n\n\n<li>Allow to rest until the rub looks moist so it doesn&#8217;t fall off.<\/li>\n\n\n\n<li>Cook the meat fat side up.<\/li>\n\n\n\n<li>Smoke at 200\u00b0 &#8211; 225\u00b0 for 10-12 hours or until the brisket hits an internal temp of 190\u00b0.<\/li>\n\n\n\n<li>Take it off the smoker, wrap tightly in foil, wrap in a towel, and put it in an empty cooler for an hour or two to rest.
