{"id":236,"date":"2001-09-09T00:00:00","date_gmt":"2001-09-09T00:00:00","guid":{"rendered":""},"modified":"2024-11-12T11:17:38","modified_gmt":"2024-11-12T17:17:38","slug":"236","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/236","title":{"rendered":"Chicken &amp; Sausage Gumbo"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>43 GR vegetable oil<\/li>\n\n\n\n<li>63 GR all purpose flour<\/li>\n\n\n\n<li>5-7 LB baking hen (cut into pieces with skin removed)<\/li>\n\n\n\n<li>\u00bd-1 LB andouille (or any smoked)\u00a0sausage (sliced)<\/li>\n\n\n\n<li>\u00bd LB tasso (cut into small pieces) (optional)<\/li>\n\n\n\n<li>1 LG\u00a0onion (chopped)<\/li>\n\n\n\n<li>6-8 cloves garlic (minced)<\/li>\n\n\n\n<li>\u00bd C celery (chopped fine)<\/li>\n\n\n\n<li>1 MED bell pepper (chopped)<\/li>\n\n\n\n<li>\u00bd C (one bunch) green onions (chopped)<\/li>\n\n\n\n<li>2-3 QT chicken stock<\/li>\n\n\n\n<li>2 bay leaves<\/li>\n\n\n\n<li>2 TBS dry parsley<\/li>\n\n\n\n<li>Salt\/pepper to taste<\/li>\n\n\n\n<li>Dash cayenne (optional)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a heavy 4-6 QT pot brown chicken parts in 2 TBS oil (or no oil if using a non-stick pot), set aside.<\/li>\n\n\n\n<li>Brown the sausage and tasso, set aside.<\/li>\n\n\n\n<li>To save time you can process the onion, bell pepper, garlic, celery &amp; green onions in a food processor until chopped fine. Add to the pot with the parsley and 1 TSP of salt and saute until the onion turns translucent.<\/li>\n\n\n\n<li>To the side make a roux from oil and flour, stirring constantly until sufficiently browned. Add 1 QT of stock and whisk until smooth. Add to the pot.<\/li>\n\n\n\n<li>Add chicken, sausage, tasso and bay leaves. Add 1 QT of chicken stock to start and more gradually as gumbo cooks to keep proper consistency.
