{"id":2444,"date":"2024-11-15T13:49:49","date_gmt":"2024-11-15T19:49:49","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2444"},"modified":"2024-11-15T13:49:49","modified_gmt":"2024-11-15T19:49:49","slug":"pickled-peppered-cherries-with-mint","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/pickled-peppered-cherries-with-mint","title":{"rendered":"Pickled Peppered Cherries With Mint"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>1 LB fresh cherries<\/li>\n\n\n\n<li>2 C white wine vinegar<\/li>\n\n\n\n<li>1 C apple cider vinegar<\/li>\n\n\n\n<li>2 C white sugar<\/li>\n\n\n\n<li>\u00bc TSP kosher salt<\/li>\n\n\n\n<li>16 (4 per PT) fresh mint leaves<\/li>\n\n\n\n<li>8 TSP (2 per PT) pink peppercorns<\/li>\n<\/ul>\n\n\n\n<p>You may opt to leave the cherries intact with pits and stems (trimmed to \u00bd&#8221;), but pitting and stemming makes for easier use later. If pitting and stemming, reserve 4 TBS of the pits (1 per PT) to add to the jars as the pits add a nice, slightly almond flavor to the brine.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Divide the pits (if using), mint and cherries evenly into 4 sanitized PT jars with tight-fitting lids. Pack as tightly as you can, filling to within \u00bc&#8221; of the top of the jar.<\/li>\n\n\n\n<li>Combine the remaining ingredients in a non-reactive saucepan. Bring to a boil and simmer for 4 full minutes to wake up the spice flavors.<\/li>\n\n\n\n<li>Slowly and gently pour the hot brine over the cherries, evenly distributing spices, filling to within \u00bc&#8221; of the top of the jar.<\/li>\n\n\n\n<li>Let cool completely, then cover and refrigerate for at least 5-7 days before eating. Can be refrigerated for up to 9 months.<\/li>\n\n\n\n<li>Alternatively, you can use a standard hot water bath canning method to preserve them further.<\/li>\n<\/ol>\n\n\n\n<p>Yields 4 PT.<\/p>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">NOTE:<\/span><\/strong> If canning you can simplify the process as follows: divide evenly and add to the bottom of each jar the pits (if using), peppercorns and mint before adding the cherries. Combine the vinegars, salt and sugar then bring to a boil. Turn off the heat then add to the jars.
