{"id":2484,"date":"2024-11-15T16:10:27","date_gmt":"2024-11-15T22:10:27","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2484"},"modified":"2024-11-15T16:10:27","modified_gmt":"2024-11-15T22:10:27","slug":"cauliflower-soup-instant-pot","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/cauliflower-soup-instant-pot","title":{"rendered":"Cauliflower Soup (Instant Pot)"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>2 carrots (minced)<\/li>\n\n\n\n<li>2 celery stalks (minced)<\/li>\n\n\n\n<li>1 MED onion (minced)<\/li>\n\n\n\n<li>32 OZ frozen cauliflower or 2 heads fresh cauliflower<\/li>\n\n\n\n<li>6 C vegetable broth<\/li>\n\n\n\n<li>Salt and black pepper<\/li>\n\n\n\n<li>4 TBS butter<\/li>\n\n\n\n<li>4 TBS flour<\/li>\n\n\n\n<li>2 C milk<\/li>\n\n\n\n<li>Parsley<\/li>\n\n\n\n<li>Nutmeg<\/li>\n\n\n\n<li>Sour cream (optional)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Sautee carrots, celery and onion in the Instant Pot with a little olive oil till the vegetables start to soften.<\/li>\n\n\n\n<li>Add cauliflower, vegetable broth, salt and black pepper, and stir.<\/li>\n\n\n\n<li>Put the lid on, set to sealing, and pressure cook for 7 minutes.<\/li>\n\n\n\n<li>Once it&#8217;s come up to pressure and started to count down melt butter in a saucepan, whisk in the flour. Once thoroughly mixed, whisk in the milk. Bring to a simmer then whisk frequently over low heat till it starts to thicken. Turn off the heat and add salt, parsley, and nutmeg; stir, cover.<\/li>\n\n\n\n<li>When the Pot beeps done, press &#8220;cancel&#8221; and release the pressure. Remove the lid and set to &#8220;saute&#8221;. Use a potato masher to break up the veg bits. Once the soup is bubbling, stir in the white sauce from above. Let simmer for about 5-7 minutes or until soup starts to thicken a little. If you like extra creamy soup, add a little cream and stir.
