{"id":2492,"date":"2024-11-15T16:35:16","date_gmt":"2024-11-15T22:35:16","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2492"},"modified":"2024-11-15T16:35:16","modified_gmt":"2024-11-15T22:35:16","slug":"fig-chutney-david-lebovitz","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/fig-chutney-david-lebovitz","title":{"rendered":"Fig Chutney &#8211; David Lebovitz"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>1 TBS vegetable oil<\/li>\n\n\n\n<li>1 LG red onion (peeled and finely diced)<\/li>\n\n\n\n<li>\u00bd inch (2cm) piece of fresh ginger (peeled and minced)<\/li>\n\n\n\n<li>\u2154 C (120g) packed light or dark brown sugar<\/li>\n\n\n\n<li>\u00bd C (125ml) apple cider vinegar<\/li>\n\n\n\n<li>Juice and zest of one lemon<\/li>\n\n\n\n<li>\u00be C (100g) raisins and diced dried fruits (any mix)<\/li>\n\n\n\n<li>1\u00bd TSP mustard seeds<\/li>\n\n\n\n<li>1 SM cinnamon stick<\/li>\n\n\n\n<li>\u00bc TSP ground allspice<\/li>\n\n\n\n<li>\u00bc TSP salt<\/li>\n\n\n\n<li>\u215b TSP ground cloves<\/li>\n\n\n\n<li>Pinch red pepper powder<\/li>\n\n\n\n<li>1 LB (450g) fresh figs (stemmed and diced)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a wide saucepan, heat the vegetable oil over medium heat. Add the onions and cook until translucent, which will take about 5-6 minutes, stirring occasionally.<\/li>\n\n\n\n<li>Add the remaining ingredients, except for the figs. Let cook at a low simmer for 20 minutes, then add the figs, cover the pot, and cook for 5 to 10 minutes, until the figs are tender and cooked through.<\/li>\n\n\n\n<li>Remove the lid and cook 10 to 15 minutes over low heat, stirring, until the mixture thickens and becomes jam-like.<\/li>\n<\/ol>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">NOTE:<\/span><\/strong> Feel free to play around with the spices in this chutney.
