{"id":2543,"date":"2024-11-18T13:42:52","date_gmt":"2024-11-18T19:42:52","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2543"},"modified":"2024-11-18T13:42:52","modified_gmt":"2024-11-18T19:42:52","slug":"pineapple-upside-down-cake","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/pineapple-upside-down-cake","title":{"rendered":"Pineapple Upside Down Cake"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>Nonstick cooking spray, for greasing the pan<\/li>\n\n\n\n<li>1 MED pineapple (cored and sliced into \u00bd&#8221; thick pieces)<\/li>\n\n\n\n<li>2\u00bc C granulated sugar (divided)<\/li>\n\n\n\n<li>8 OZ unsalted butter (melted)<\/li>\n\n\n\n<li>2 eggs<\/li>\n\n\n\n<li>\u00be C whole milk<\/li>\n\n\n\n<li>1 lemon (zested) (~2 TSP)<\/li>\n\n\n\n<li>2 C all-purpose flour<\/li>\n\n\n\n<li>2 TSP kosher salt<\/li>\n\n\n\n<li>\u00bd TSP baking soda<\/li>\n\n\n\n<li>\u00bd TSP baking powder<\/li>\n<\/ul>\n\n\n\n<p><strong>Oven:<\/strong> 350\u00b0 F<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Grease a high sided 8-inch cake pan with cooking spray and line with parchment. Line the bottom of the pan with a concentric circles of pineapple slices then arrange the remaining in the center.<\/li>\n\n\n\n<li>In a medium saucepan, combine \u00be cup sugar with 2 tablespoons water over medium-high heat. Cook, shaking the pan if needed, until an amber caramel forms, 5-6 minutes. Immediately pour over pineapple in an even layer.<\/li>\n\n\n\n<li>In a large bowl, whisk remaining 1\u00bd cups sugar with butter until smooth. Add eggs and whisk until incorporated, followed by milk and lemon zest.<\/li>\n\n\n\n<li>Add remaining ingredients to bowl and fold until just incorporated, then pour over the caramel-coated pineapple. Bake until the top is golden and a toothpick inserted into the center comes out clean, 60-70 minutes.<\/li>\n\n\n\n<li>Let cool 10 minutes, then run a paring knife along the edges of the cake. Place a plate over the cake pan and invert, discarding parchment paper.
