{"id":2649,"date":"2025-06-04T12:02:19","date_gmt":"2025-06-04T17:02:19","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2649"},"modified":"2025-06-04T13:12:04","modified_gmt":"2025-06-04T18:12:04","slug":"jamaican-rice-and-peas","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/jamaican-rice-and-peas","title":{"rendered":"Jamaican Rice and Peas"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>1 C canned kidney or black beans (rinsed and drained)<\/li>\n\n\n\n<li>1 MED onion (chopped fine)<\/li>\n\n\n\n<li>2 scallions (chopped fine)<\/li>\n\n\n\n<li>3 cloves garlic (minced)<\/li>\n\n\n\n<li>\u00bd TSP ground allspice<\/li>\n\n\n\n<li>\u00be TSP ground thyme<\/li>\n\n\n\n<li>1 Scotch bonnet pepper (whole, stem removed)<\/li>\n\n\n\n<li>\u00bd TSP grated fresh ginger<\/li>\n\n\n\n<li>2 TSP kosher salt<\/li>\n\n\n\n<li>\u00bd TSP black pepper<\/li>\n\n\n\n<li>\u00bd C water<\/li>\n\n\n\n<li>13.5 OZ unsweetened coconut milk<\/li>\n\n\n\n<li>2 C long-grain white rice (short grain can be used, but it will be stickier)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a large saucepan combine the onion, scallions, garlic, allspice, thyme, Scotch bonnet, ginger, salt, pepper, water and coconut milk. Bring to a simmer.<\/li>\n\n\n\n<li>Stir in the rice, cover and simmer over low heat until the rice is tender and the liquid is absorbed, about 30 minutes.<\/li>\n\n\n\n<li>Remove from the heat and let steam for 10 minutes, then discard the Scotch bonnet pepper. Using a fork, fluff the rice and beans and season with salt if needed.<\/li>\n<\/ol>\n\n\n\n<p>Can be made in a rice cooker: combine all ingredients, stir well and cook. When done, continue with step 3 above.<\/p>\n\n\n\n<p>Yields 8 servings.<\/p>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">NOTES:<\/span><\/strong> The Scotch bonnet pepper lends a slightly fruity flavor without the intense heat because the seeds and flesh are not exposed.
