{"id":2701,"date":"2025-11-04T14:25:11","date_gmt":"2025-11-04T20:25:11","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2701"},"modified":"2025-11-04T14:35:55","modified_gmt":"2025-11-04T20:35:55","slug":"moroccan-harira-lentil-chickpea-soup","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/moroccan-harira-lentil-chickpea-soup","title":{"rendered":"Moroccan Harira (Lentil &amp; Chickpea Soup)"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>1 C dried or 15 OZ canned garbanzo beans (soak overnight if using dried, drained and rinsed if using canned)<\/li>\n\n\n\n<li>1 LB lamb or beef (stew meat cut into 2&#8243; cubes)<\/li>\n\n\n\n<li>2 TBSP olive oil<\/li>\n\n\n\n<li>1 LG onion (diced fine)<\/li>\n\n\n\n<li>6 cloves galic (minced)<\/li>\n\n\n\n<li>3-4 LG carrots (diced fine)<\/li>\n\n\n\n<li>2 ribs celery (diced fine)<\/li>\n\n\n\n<li>\u00bc C cilantro, divided (minced)<\/li>\n\n\n\n<li>\u00bc C parsley, divided (minced)<\/li>\n\n\n\n<li>1 TBS salt<\/li>\n\n\n\n<li>\u00bd TSP black pepper<\/li>\n\n\n\n<li>2 TSP ground ginger<\/li>\n\n\n\n<li>1\u00bd TSP paprika<\/li>\n\n\n\n<li>1 TSP tumeric<\/li>\n\n\n\n<li>1 TSP cumin<\/li>\n\n\n\n<li>\u00bc TSP cinnamon<\/li>\n\n\n\n<li>8 OZ tomato puree<\/li>\n\n\n\n<li>3 C stock<\/li>\n\n\n\n<li>5-7 C water<\/li>\n\n\n\n<li>1 C red lentils<\/li>\n\n\n\n<li>Cornstarch slurry: 2 TSP cornstarch + 2 TSP water<\/li>\n\n\n\n<li>1 C broken vermicelli noodles or white rice<\/li>\n\n\n\n<li>Splash lemon juice<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a heavy 6 QT pot over medium-high heat add the oil and brown the meat. Remove the meat from pot and set aside. Drain the excess fat from the pot.<\/li>\n\n\n\n<li>Add the onion, carrot, celery, garlic, and half of the cliantro and parsley and sautee until onions are translucent. Stir in all the spices and allow to toast.<\/li>\n\n\n\n<li>Add the tomato paste and stir to combine and coat.<\/li>\n\n\n\n<li>Add the stock, water, chickpeas and lentils (and rice if using). Cover and simmer over low for 25 &#8211; 30 minutes or until the beans, lentils and meat are cooked through.<\/li>\n\n\n\n<li>Near the end of cooking add the cornstarch slurry and allow to thicken.<\/li>\n\n\n\n<li>Add the rice noodles (if using) and allow a few minutes to cook through.<\/li>\n\n\n\n<li>Add a dash of lemon juice to taste and the rest of the herbs.<\/li>\n<\/ol>\n\n\n\n<p>Yields 8 servings.<\/p>\n\n\n\n<p>Calories: 397 | Total Fat: 16.4g | Saturated Fat: 6.5g | Cholesterol: 81.6mg | Sodium: 384mg | Carbs: 32.5g | Fiber: 5.2g | Sugars: 7.1g | Protein: 28.7g<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yields 8 servings.
