{"id":274,"date":"2001-09-09T00:00:00","date_gmt":"2001-09-09T00:00:00","guid":{"rendered":""},"modified":"2001-09-09T00:00:00","modified_gmt":"2001-09-09T00:00:00","slug":"274","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/274","title":{"rendered":"Oyster Dressing"},"content":{"rendered":"<p>2 large onions (chopped)<br \/>\n\u00bd C fresh parsley<br \/>\n2 C celery (chopped)<br \/>\n6-10 cloves garlic (minced)<br \/>\n2 bunches (\u00bd C) green onions(chopped)<br \/>\n\u00bd TSP thyme (to taste)<br \/>\n\u00bd-1 gallon oysters (and their water)<br \/>\nSalt and pepper to taste<br \/>\n3 loaves stale french bread or bags of stuffing bread<br \/>\n1-2 TBS olive oil (for saut\u00e9)<\/p>\n<p><strong>Temperature:<\/strong> 350<\/p>\n<p>Soak bread (from bags or loaves) in oyster water. Squeeze as dry as possible (bread is soft and formless). Chop oysters finely in Cuisinart or blender. Saut\u00e9 till cooked then set aside. Reduce the resulting fluid to \u00bc volume. Saut\u00e9 onion and garlic. Add celery and green onion stir fry till soft and blended. In a large pot, mix soaked bread and vegatables. Add cooked oysters and reduced oyster water. Add parsley, thyme, 2 TSP salt and \u00bd TSP pepper to start. Mix well using your hands. Add bread crumbs from 4th loaf or chicken stock (or oyster water) to adjust consistency (soft and moist &#8211; not wet).
