{"id":2744,"date":"2026-06-19T13:49:20","date_gmt":"2026-06-19T18:49:20","guid":{"rendered":"https:\/\/dmentd.com\/blog\/?p=2744"},"modified":"2026-06-19T13:49:20","modified_gmt":"2026-06-19T18:49:20","slug":"thai-chicken-peanut-noodles","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/thai-chicken-peanut-noodles","title":{"rendered":"Thai Chicken Peanut Noodles"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>3 TBS oil<\/li>\n\n\n\n<li>6 garlic cloves (minced)<\/li>\n\n\n\n<li>1\u00bd LB ground turkey (or chicken, pork, beef)<\/li>\n\n\n\n<li>1 TSP mild curry powder<\/li>\n\n\n\n<li>\u00bc TSP ground black pepper<\/li>\n\n\n\n<li>4 OZ red curry paste<\/li>\n\n\n\n<li>3\u00bd TBS dark soy sauce<\/li>\n\n\n\n<li>4\u00bd C chicken stock<\/li>\n\n\n\n<li>2\u00bc C coconut milk, full fat for best flavour<\/li>\n\n\n\n<li>6 TBS cider vinegar<\/li>\n\n\n\n<li>9 TBS peanut butter<\/li>\n\n\n\n<li>5 instant ramen or noodle cakes ~70-100 GR \/ 2\u00bd-3\u00bd OZ per cake (discard seasoning pack)<\/li>\n\n\n\n<li>6 OZ baby spinach<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><span style=\"text-decoration: underline;\">To Serve:<\/span><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>6 TBS peanuts (finely chopped)<\/li>\n\n\n\n<li>Roughly chopped fresh coriander\/cilantro leaves (optional)<\/li>\n\n\n\n<li>Sriracha or other chili paste (optional)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat oil in a medium skillet over high heat. Add ground chicken and cook for 2 minutes, breaking it up as you go, until it mostly changes from pink to white.<\/li>\n\n\n\n<li>Add garlic and cook for 1 minute.<\/li>\n\n\n\n<li>Add red curry powder, black pepper, curry paste and soy sauce. Cook for 1 minute.<\/li>\n\n\n\n<li>Add chicken stock, bring to a simmer then reduce to medium-high. Simmer for 1 minute.<\/li>\n\n\n\n<li>Squish the noodle cakes in, pushing chicken aside so the noodles are as submerged as possible.<\/li>\n\n\n\n<li>Leave to cook for 45 seconds, then flip noodles.
