{"id":283,"date":"2001-09-09T00:00:00","date_gmt":"2001-09-09T00:00:00","guid":{"rendered":""},"modified":"2001-09-09T00:00:00","modified_gmt":"2001-09-09T00:00:00","slug":"283","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/283","title":{"rendered":"Seafood Jambalaya"},"content":{"rendered":"<p>1 large onion (chopped)<br \/>\n8 cloves garlic (minced)<br \/>\n1 bunch green onion (chopped)<br \/>\n1 C celery (chopped coarse)<br \/>\n\u00bc C parsley (chopped or dried)<br \/>\n2 bay leaves<br \/>\n2 C white rice<br \/>\n1 large can tomatoes (drained &#038; mashed)<br \/>\n2 C tomato liquid<br \/>\n2 C water<br \/>\n2 TBS olive oil<br \/>\n1 LB smoked sausage or andouille<br \/>\n2\u00bd TSP salt<br \/>\n\u00bc TSP black pepper<br \/>\nDash cayenne to taste<br \/>\n2 LB shrimp (raw &#038; peeled)<br \/>\n\u00bd to 1 LB crabmeat (white or claw)<br \/>\n1 LB crawfish tails (optional)<\/p>\n<p><strong>Temperature:<\/strong> <\/p>\n<p>In a heavy 5 QT pot, saut\u00e9 onions in oil till clear. Add garlic and saute for 3 more minutes. Add sliced sausage and fry for 5 minutes. Add shallots and celery and stir fry till soft and blended, about 10 minutes. Drain tomatoes and place liquid in a 2 or 4 C measuring container. Mash tomatoes and add to the pot. Add seasonings and 2 C of the tomato liquid. Simmer for 1 hour. Add seafood and cook only till shrimp are done, about 5 minutes. Add 2 C water and bring to a boil.
