{"id":328,"date":"2001-09-09T00:00:00","date_gmt":"2001-09-09T00:00:00","guid":{"rendered":""},"modified":"2014-10-03T12:26:50","modified_gmt":"2014-10-03T17:26:50","slug":"328","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/328","title":{"rendered":"Corn Maque Choux"},"content":{"rendered":"<p>8 slices bacon<br \/>\n1 LB andouille (or any smoked) sausage (sliced)<br \/>\n2 LG onion (chopped fine)<br \/>\n1 MED bell pepper (chopped fine)<br \/>\n4-8 cloves garlic (minced)<br \/>\n1 C fresh or canned crushed tomatoes<br \/>\n1 C milk or light cream<br \/>\n2 cubes chicken bullion<br \/>\n2 TBS flour<br \/>\n\u00bc TSP black pepper<br \/>\n1\u00bd TSP salt<br \/>\n2 TSP sugar<br \/>\n\u00bc TSP cayenne<br \/>\n2 bay leaves<br \/>\n1 TSP dried basil leaves<br \/>\n1 TSP Worcestershire<br \/>\n\u00bc TSP Tabasco<br \/>\n8 C corn (fresh, or ~40 OZ\/weight frozen)<\/p>\n<p>In a heavy 4-6 QT pot cook the bacon, then set aside and reserve 3 TBS drippings or use olive oil. Brown off the sausage, then set aside. Saut\u00e9\u00a0the onions, garlic and bell pepper until soft. Return the bacon and sausage to the pan.
