{"id":342,"date":"2001-09-09T00:00:00","date_gmt":"2001-09-09T00:00:00","guid":{"rendered":""},"modified":"2001-09-09T00:00:00","modified_gmt":"2001-09-09T00:00:00","slug":"342","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/342","title":{"rendered":"Smothered Green Beans"},"content":{"rendered":"<p>1 large onion (chopped)<br \/>\nPotatoes (red,idaho or gold) (cut)<br \/>\n6-8 cloves garlic (chopped)<br \/>\n1-2 LB ham (cubed)<br \/>\n3 LB green beans<br \/>\nWater<br \/>\n2 TSP salt<br \/>\n\u00bc TSP pepper<br \/>\n\u00bd LB bacon (optional)<\/p>\n<p><strong>Temperature:<\/strong> <\/p>\n<p>Wash the beans and cut off the ends.  If using bacon, cook it till it&#8217;s crisp and set aside.  Saute the onion in 2 TSP olive oil or bacon drippings until soft.  Add the garlic and cook for 3 minutes.  Add the ham, and stirfry for about 5 minutes or until slightly braised.  Add water to fill the pot to 2&#8243;, beans, bacon, salt and pepper.  Cover and cook on low heat until beans are to desired consistency &#8211; about 1 to 1\u00bd hrs.  Check for desired seasoning flavor half-way through  cooking as you can&#8217;t effectively season beans or any vegetable after they&#8217;ve cooked).  Maintain about 2&#8243; of water in the pot at all times.
