{"id":368,"date":"2001-09-09T00:00:00","date_gmt":"2001-09-09T00:00:00","guid":{"rendered":""},"modified":"2024-11-15T13:10:40","modified_gmt":"2024-11-15T19:10:40","slug":"368","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/368","title":{"rendered":"Chili (Vegan)"},"content":{"rendered":"\n<ul class=\"wp-block-list\">\n<li>1 LB dry mixed beans (soaked 8-12 hours or overnight)<\/li>\n\n\n\n<li>2 MED tomatoes (pureed)<\/li>\n\n\n\n<li>1 LG red onion (diced)<\/li>\n\n\n\n<li>1 bunch green onions (tops and bottoms, chopped)<\/li>\n\n\n\n<li>1 TBS garlic (minced)<\/li>\n\n\n\n<li>1 LG green bell pepper (diced)<\/li>\n\n\n\n<li>\u00bc C fresh parsley (chopped)<\/li>\n\n\n\n<li>1 TBS oregano<\/li>\n\n\n\n<li>1 TBS cumin<\/li>\n\n\n\n<li>1\u00bd TBS chili powder<\/li>\n\n\n\n<li>1 TSP allspice<\/li>\n\n\n\n<li>16 OZ R.W. Knudsen&#8217;s Very Veggie (or V-8) &#8211; Spicy<\/li>\n\n\n\n<li>Tony Chachere&#8217;s Original Creole Seasoning (to taste)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Place beans in an 8 QT pot with water about 1 inch above the beans.<\/li>\n\n\n\n<li>Add the allspice and some Tony&#8217;s to the water and bring to a boil, allowing the beans to simmer for approximately one hour until the beans are tender and have cooked down some.<\/li>\n\n\n\n<li>Stir in the pureed tomatoes, oregano, parsley, cumin and only 1 TBS of the chili powder.<\/li>\n\n\n\n<li>Saut\u00e9 the red onion, green onion, garlic and bell pepper in a small skillet using a little water and some of the vegetable juice. When the saut\u00e9ed vegetables are soft stir them into the chili.<\/li>\n\n\n\n<li>Add the remaining vegetable juice and the last \u00bd TBS of chili powder to the chili. Remember to add Tony&#8217;s to taste.<\/li>\n\n\n\n<li>Bring the heat down to low and continue to simmer and cook 1 to 2 hours or until beans are tender.<\/li>\n<\/ol>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">NOTE:<\/span><\/strong> Using canned beans will reduce cooking time, but it&#8217;s better if you have the time to cook the dry beans as you do not add the extra sodium and preservatives used in canned beans.<\/p>\n\n\n\n<p>Yields 4-5 QT.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>NOTE: Using canned beans will reduce cooking time, but it&#8217;s better if you have the time to cook the dry beans as you do not add the extra sodium and preservatives used in canned beans.
