{"id":750,"date":"2009-01-12T21:12:21","date_gmt":"2009-01-13T03:12:21","guid":{"rendered":"http:\/\/dmentd.com\/?p=750"},"modified":"2024-11-18T15:00:17","modified_gmt":"2024-11-18T21:00:17","slug":"pancakes-alton-brown","status":"publish","type":"post","link":"https:\/\/dmentd.com\/blog\/pancakes-alton-brown","title":{"rendered":"Pancakes &#8211; Alton Brown"},"content":{"rendered":"\n<p><span style=\"text-decoration: underline;\"><strong>&#8220;Instant&#8221; Pancake Mix:<\/strong><\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>6 C (750 GR) all-purpose flour<\/li>\n\n\n\n<li>1\u00bd TSP baking soda<\/li>\n\n\n\n<li>3 TSP baking powder<\/li>\n\n\n\n<li>1 TBS kosher salt<\/li>\n\n\n\n<li>2 TBS sugar<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Combine all of the ingredients in a lidded container.\u00a0 Shake to mix.\u00a0 Use the mix within 3 months.<\/li>\n<\/ol>\n\n\n\n<p>Yields ~810 GR of dry mix.<\/p>\n\n\n\n<p><span style=\"text-decoration: underline;\"><strong>Pancakes:<\/strong><\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 eggs, separated<\/li>\n\n\n\n<li>2 C buttermilk<\/li>\n\n\n\n<li>4 TBS melted butter<\/li>\n\n\n\n<li>2 C (270) &#8220;Instant&#8221; Pancake Mix (recipe above)<\/li>\n\n\n\n<li>1 stick butter, for greasing the pan<\/li>\n\n\n\n<li>2 C fresh fruit such as blueberries (optional)<\/li>\n<\/ul>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat an electric griddle or frying pan to 350\u00b0 F.\u00a0 Heat oven to 200\u00b0 F.<\/li>\n\n\n\n<li>Whisk together the egg whites and the buttermilk in a small bowl.<\/li>\n\n\n\n<li>In another bowl, whisk the egg yolks with the melted butter.<\/li>\n\n\n\n<li>Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined.\u00a0<\/li>\n\n\n\n<li>Pour the liquid ingredients on top of the pancake mix. Using a whisk, mix the batter just enough to bring it together &#8211; don&#8217;t try to work all the lumps out.<\/li>\n\n\n\n<li>Check to see that the griddle is hot by placing a few drops of water onto to the griddle.\u00a0The griddle is ready if the water dances across the surface.<\/li>\n\n\n\n<li>Lightly butter the griddle. Wipe off thoroughly with a paper towel (no butter should be visible).<\/li>\n\n\n\n<li>Using a 2 OZ ladle, gently ladle the pancake batter onto the griddle and sprinkle on fruit if desired.<\/li>\n\n\n\n<li>When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes.\u00a0Continue to cook 2 to 3 minutes or until the pancake is set.<\/li>\n\n\n\n<li>Serve immediately or remove to a towel-lined baking sheet and cover with another towel. Place in the oven to keep warm for up to 20 to 30 minutes.<\/li>\n<\/ol>\n\n\n\n<p>Yields 12 pancakes.<\/p>\n\n\n\n<p><span style=\"text-decoration: underline;\"><strong>NOTES:<\/strong><\/span> If you do not have buttermilk, you can make a substitute.\u00a0For every 1 C of buttermilk, take 1 C of whole milk and add 1 TBS of white vinegar or lemon juice and allow to stand for five minutes.\u00a0 Use as needed.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&#8220;Instant&#8221; Pancake Mix: Yields ~810 GR of dry mix.
