Banana Bran Muffins — Parker

2 C 100% bran
¾ C milk
3 TBS vegatable oil
2 TSP baking powder
1½ C flour (white, unbleached or wheat)
1 egg
½ C sugar
1 C mashed bananas
½ TSP salt
¼ C raisins
½ TSP cinnamon
½ C chopped nuts (optional)

Temperature: 350

Mix bran and milk, soak for 5 minutes. Beat in egg and oil. Stir in mashed banana. Mix dry ingredients together and stir into banana/bran mix. Fold in raisins and nuts if desired. Spoon into paper muffin cups. Bake for 20-25 minutes. Makes 12.
