- 2 C 100% bran
- ¾ C milk
- 3 TBS vegatable oil
- 2 TSP baking powder
- 1½ C flour (white, unbleached or wheat)
- 1 egg
- ½ C sugar
- 1 C bananas (mashed)
- ½ TSP salt
- ¼ C raisins
- ½ TSP cinnamon
- ½ C nuts (chopped ) (optional)
Oven: 350° F
- Mix bran and milk, soak for 5 minutes.
- Beat in egg and oil. Stir in mashed banana.
- Mix dry ingredients together and stir into banana/bran mix.
- Fold in raisins and nuts if desired. Spoon into paper muffin cups. Bake for 20-25 minutes.
Yields 12 muffins.
