Banana Bran Muffins – Parker

  • 2 C 100% bran
  • ¾ C milk
  • 3 TBS vegatable oil
  • 2 TSP baking powder
  • 1½ C flour (white, unbleached or wheat)
  • 1 egg
  • ½ C sugar
  • 1 C bananas (mashed)
  • ½ TSP salt
  • ¼ C raisins
  • ½ TSP cinnamon
  • ½ C nuts (chopped ) (optional)

Oven: 350° F

  1. Mix bran and milk, soak for 5 minutes.
  2. Beat in egg and oil. Stir in mashed banana.
  3. Mix dry ingredients together and stir into banana/bran mix.
  4. Fold in raisins and nuts if desired. Spoon into paper muffin cups. Bake for 20-25 minutes.

Yields 12 muffins.
