Been trying to really get into micro-managing my food intake the last week or so in an effort to change my eating habits for the better, and to be able to get to a point in the foreseeable future where I can do that without thinking too hard about it. As a result I’ve been developing/reworking (reworking = stealing from another source and adapting to my liking) some recipes that I can use to keep my weekly meal plan lively and not a bore. I’ve been adding the few that I have to the Recipe Library, and as a result anyone interested can benefit from my hard work. I list the number of servings and the big 4 macro nutrients (calories, fats, carbohydrates and proteins) in the body of the recipe for reference.
The first two to make it in are Teriyaki Chicken and Scallop Stir-Fry. If you want to easily find the specific recipes I’m adding for meal planning, just do a search for “calorie” and select “instructions”.

Everyone is getting so damn healthy. I’ve developed a new addiction to a cup of coffee before bed. Hurray for late night caffine.
Listen dearie, I’m the old man of the group. If I don’t start getting healthy now, my heart is going to asplode from all the bacon fat it is encased in.
Hooray for late-night caffeine, indeed! If you can find a decent Vietnamese restaurant around there, go get a Vietnamese coffee. It’s an iced coffee drink. They percolate a REALLY strong blend of coffee over a serving of condensed (yes, I said CONDENSED, not EVAPORATED) milk, which you stir and mix the holy living hell out of when it’s done, then pour over ice. Perfection! No need to add anything, and it’ll wake your ass RIGHT up. And it tastes really good too. One of the local coffee house here does a passable rendition of it using a double espresso in the place of whatever coffee the Vietnamese place uses.
And Moms, if you’re willing to drive 8½ — 10 hours to come to dinner, I’ll cook anything you like, and serve it at any time.
Um, no Vietnamese places that I can find… unless the bubble tea place counts? Well, I can’t have that. We drink our coffee with (sigh) non-fat dairy creamer and splenda. It’s a shot at dessert without the ice cream. My body apparently still thinks I’m pregnant cause I can’t seem to make a dent in the baby weight. My husband and I wiegh the same. How depressing is that shit. I miss Pho Tau Bay. Alot. Fish soup. Sigh……
