⅔ C smooth peanut butter (if the peanut butter is thick, microwave is for ~15 seconds first)
1 TSP freshly minced ginger
2 TBS maple syrup
4 TBS low sodium soy sauce
5 TSP rice wine vinegar
2 TSP sesame seeds
4 – 8 TBS hot water
½ TSP crushed red pepper flakes (optional)
Whisk all the ingredients (minus the hot water) together in a bowl, put in a jar with a lid and shake vigorously, or a small blender or food processor until smooth.
Add the extra water a little at a time depending on whether you need this for a sauce, dip or a dressing to your desired consistency.
This can be made ahead of time and stored in the fridge, or used immediately.
